Custard… Did you ever think you’d taste it again once you went Paleo, GAPS or Dairy-free?

If you answered no, and have been craving custard, I’m going to be your new favorite person. I know what you’re saying: “It can’t be done!”

I’m here to tell you: “Yes, it can!”

Here are my secrets for my Dairy Free, Paleo and GAPS-friendly Custard:

  • Gelatin- it’s one of the helpful, magical ingredients that makes a custard without flour or starch plausible. Gelatin has wonderful gut healing properties. I use a high ratio of gelatin in my custard to promote a healthy gut and also so it’s thick when it’s still warm… because who doesn’t love warm custard?
  • Pine nuts- to make custard dairy-free, I use soaked pine nuts to make a beautiful homemade pine nut milk. Mmm. Cashews can be substituted for the same creamy effect and mild flavor. If you can tolerate dairy, this recipe can be made not only with homemade seed or nut milk, but also with raw goat’s or cow’s milk.
  • Sweetener- Depending on your sensitivities you can sweeten this recipe with NuNaturals stevia (for those with fructose sensitivities) or with raw organic honey for a slightly sweeter custard.

Serve this custard warm as a beverage; drinkable, nourishing, and comforting. Or serve it cold as a delicious, thick, creamy dessert.
