Creamy Beef and Mushroom Noodles: The Cozy Weeknight Dinner Your Family Will Love

There’s something wonderfully comforting about a creamy pasta dish, especially when it’s loaded with tender beef strips, golden mushrooms, and a rich, savory sauce. This Creamy Beef and Mushroom Noodles recipe is a weeknight wonder: easy to whip up, surprisingly budget-friendly, and perfect for feeding the whole family. Let’s break down why this dish is a keeper!

Why Creamy Beef and Mushroom Noodles is a Winner

  • Family-Friendly: This dish has universal appeal, thanks to its rich, savory flavors. Kids and adults alike love a creamy sauce with tender noodles, and the mushrooms add an earthy depth that’s familiar yet flavorful.
  • Inexpensive: Using a thin cut of beef, some mushrooms, and a few kitchen staples, you can create an elegant meal without breaking the bank. Plus, cream cheese works magic as a thickener, adding a velvety texture to the sauce with just a few tablespoons.
  • Quick to Make: With only about 30 minutes of total cook time, this is a weeknight win! Searing the beef and building the sauce in one pan keeps things simple, letting you enjoy more family time and less cleanup.
  • Customizable: Not into mushrooms? Add bell peppers or even a handful of spinach. Want to boost the creaminess? Add a splash of cream or milk. It’s flexible, forgiving, and totally adaptable to your family’s tastes.

Recipe Rundown

This recipe starts by slicing and searing the beef to lock in the juices, followed by a quick sauté of shallots and garlic for a savory base. The mushrooms cook until golden, creating a deep flavor that pairs perfectly with the creamy sauce. Serve it all over wide noodles (we used pot pie squares for a hearty touch), garnish with fresh parsley, and you’ve got a meal that tastes like it took all day but only needed minutes.

Tips for the Perfect Creamy Beef and Mushroom Noodles

  • Thin-Cut Beef: Using a thin cut steak, like round tip, keeps cooking time down and guarantees tender, melt-in-your-mouth bites.
  • Flavor Boost: Freshly ground black pepper at the end adds a little kick and elevates the creamy flavors in the sauce.
  • Leftover Magic: This dish reheats beautifully, so consider making extra for a next-day lunch that tastes just as good, if not better.

If you’re craving a warm, comforting meal that everyone will love, give this Creamy Beef and Mushroom Noodles recipe a try. It’s perfect for cozy evenings at home, and it might just become a regular on your weeknight rotation!

Ingredients

  • 1 lb beef round tip steak sliced into thin strips
  • Salt and freshly ground black pepper to taste
  • 1 tbsp avocado oil olive or vegetable
  • 1 tbsp butter
  • 1 shallot finely chopped
  • 2 cloves garlic minced
  • 1 cup baby portabella mushrooms thinly sliced
  • 3 tbsp cream cheese
  • 1/2 cup beef broth (or water) + more if needed to adjust sauce consistency
  • Pot pie square noodles or your choice of wide pasta, cooked according to package directions
  • Fresh parsley chopped, for garnish (optional)

Instructions

Cook the Noodles:

  • Prepare noodles according to package directions. Drain, then set aside.
Bag of old fashioned large pot pie noodles.

Sear the Steak:

  • Heat 1 tbsp oil in a large skillet over medium-high heat.
  • Season the steak strips with salt and black pepper.
Perfectly sliced beef ready for the pan.
  • Add the steak strips to the hot pan, searing briefly until just browned. (They’ll finish cooking in the sauce.) Remove steak strips and set aside.

Sauté the Shallot and Garlic:

  • In the same pan, reduce heat to medium, then add 1 tbsp butter.
  • Add the chopped shallot, cooking until softened and golden, about 2-3 minutes.
Shallots sautéing on the stove with minced garlic and sliced mushrooms ready to go in the pan next.
  • Add minced garlic, stirring for about 30 seconds until fragrant.

Cook the Mushrooms:

  • Add the sliced mushrooms to the pan with a pinch of salt, stirring until they turn golden brown and have released their juices, about 5 minutes.

Make the Creamy Sauce:

  • Add the cream cheese, stirring until melted and smooth.
  • Gradually add the water or beef broth, stirring to reach a creamy sauce consistency. Add more liquid if the sauce is too thick.

Combine Steak and Sauce:

  • Return the seared steak strips to the skillet, gently stirring to coat with sauce.
  • Let the steak simmer in the sauce for 2-3 minutes to finish cooking and absorb flavor. Season with additional black pepper, to taste.

Serve:

  • Serve the creamy beef and mushroom sauce over the cooked noodles.
  • Garnish with fresh parsley if desired.
