Creamy Easy Ditalini Pasta

This easy creamy pasta recipe was born out a desire to use ditalini pasta in a different way. Have you seen the viral garlic ditalini pasta recipe making the rounds on social media? I kept seeing the recipe everywhere, so I scooped up the pasta and made it. Was it good? Yeah! Did it blow my mind? Nah. I was left with a box full of ditalini pasta…which is how this recipe was born. I definitely like this recipe better. 😉
Would I buy ditalini pasta again? Heck yeah! It’s a bit dense and just different! It’s honestly pretty fun to eat, too.
Before you get to the recipe below, please note…
This is one of those “Don’t Overthink It!” kind-of recipes.
Really! How much chicken? I dunno…do you reeeeally like chicken? Add more!
How much spinach? Chicken stock or water!? Do I have to add sun-dried tomatoes? I don’t have ditalini pasta!!!
Stop. Just take a breath. Innnnn and Outttttt. I want people to feel more at home in their kitchens. Yes, some recipes are meant to be very specific, but this one is not. Make this creamy easy ditalini pasta all yours, my friend!
I mean, onions!?? Sure thing…sauté some and toss them in. Mushrooms…? Yeah, that sounds like a delicious addition and I’m here for it! Have fun, and enjoy. Believe in yourself and the magic you can make in the kitchen!
Again, I’m not telling you what to do, but you really should consider whipping up some gluten-free breadsticks while you are at it!

Easy Creamy Ditalini Pasta
Ingredients
Main Ingredients (see amounts below in instructions)
- Chicken Stock or Broth – or veggie stock or even water
- Ditalini Pasta – or whatever pasta you like
- Chicken
- Sun-dried Tomatoes – packed in olive oil
- Spinach – frozen or fresh
- Heavy Cream – or milk or whatever milk sub you'd like
- Parmesan Cheese
Possible Extras (you know your tastes!)
- Italian Seasoning
- Dried Minced Garlic
- Butter
- Salt & Pepper
Instructions
- Bring to boil a pot of chicken stock (or whatever liquid you choose). Once boiling, add pasta. Drain when done and sit aside.
- How much pasta? However much pasta you want! I used about a cup.
- Cook chicken in a bit of oil or butter until done. Sit aside on a plate.
- I used 2 breasts. You use whatever you want and however much you want! Just cut chicken into consistently sized chunks for even cooking.
- Add sun-dried tomatoes (I used two sun-dried tomatoes and thinly slivered them). Sauté for a couple of minutes.
- Add heavy cream. I just splashed some in. Maybe a ½ to ¾ cup!?
- Add any extras, like dried minced garlic, seasonings, etc. I tossed in a knob of butter because…butter.
- Add spinach
- How much spinach? However much you like! I grabbed a handful of frozen spinach, microwaved it a minute at a time until it was no longer frozen. Then I squeezed water out of the spinach over the sink and tossed it in the skillet. If you use fresh, just toss it in, cover skillet with a lid, and let it wilt down.
- Stir in cooked chicken and pasta. Sprinkle with parmesan cheese and gobble it up!
This recipe uses only a couple of sun-dried tomatoes, so here’s another recipes where they would be a welcome addition!
