Creamy Beef and Mushroom Noodles

Ingredients

lb
beef round tip steak
sliced into thin strips
Salt and freshly ground black pepper
to taste

tbsp
avocado oil
olive or vegetable

tbsp
butter
1
shallot
finely chopped
2
cloves
garlic
minced
1
cup
baby portabella mushrooms
thinly sliced

tbsp
cream cheese
1/2
cup
beef broth
(or water) + more if needed to adjust sauce consistency
Pot pie square noodles
or your choice of wide pasta, cooked according to package directions
Fresh parsley
chopped, for garnish (optional)
Instructions
Cook the Noodles:
Prepare noodles according to package directions. Drain, then set aside.
Sear the Steak:
Heat 1 tbsp oil in a large skillet over medium-high heat.
Season the steak strips with salt and black pepper.
Add the steak strips to the hot pan, searing briefly until just browned. (They’ll finish cooking in the sauce.) Remove steak strips and set aside.
Sauté the Shallot and Garlic:
In the same pan, reduce heat to medium, then add 1 tbsp butter.
Add the chopped shallot, cooking until softened and golden, about 2-3 minutes.
Add minced garlic, stirring for about 30 seconds until fragrant.
Cook the Mushrooms:
Add the sliced mushrooms to the pan with a pinch of salt, stirring until they turn golden brown and have released their juices, about 5 minutes.
Make the Creamy Sauce:
Add the cream cheese, stirring until melted and smooth.
Gradually add the water or beef broth, stirring to reach a creamy sauce consistency. Add more liquid if the sauce is too thick.
Combine Steak and Sauce:
Return the seared steak strips to the skillet, gently stirring to coat with sauce.
Let the steak simmer in the sauce for 2-3 minutes to finish cooking and absorb flavor. Season with additional black pepper, to taste.
Serve:
Serve the creamy beef and mushroom sauce over the cooked noodles.
Garnish with fresh parsley if desired.
