Oliver Loves Cookies!

Between the toddler, hubs, and I, we actually go through a lot of cookies in our home. There are plenty of *real* food cookies that I have learned to make that not only give me the sweet taste I crave, but also fill me up with nourishment.

That is today’s post…a gluten-free YUMMY cookie packed with healthy fat and nourishing flours. Hooray!

Oh, is this my own recipe? Nope, it sure isn’t. To tell you the truth, I’d much rather create my own breads (like any of these that you find on my blog) than create cookies.

I like having someone else’s tried and true recipes for cookies. Just get me into the kitchen, tell me what I need, get it out, whip it all together, pop them in the oven, and quickly enjoy. Perfect.


So, today I bring you pictures and beautiful ingredients for a new favorite in our home – Chocolate Almond Crackles.

Joyce, a fond friend of mine who blogs at The Skinny Pear, created these little lovelies. The toddler cannot get enough, I can’t either…and even hubs has been caught stealing them late at night.

Joyce has been on a journey of weight loss, creating greater health, and discovering her full potential as she goes through schooling to become a Registered Holistic Nutritionist. She shares wonderful information on her blog and in various social media outlets, as well as lots of UhMaaaZing recipes, like this one.

Chocolate Almond Crackles

Chocolate Almond Crackles

  • 4 cups almond flour (like THIS)
  • 1⁄4 cup coconut flour (THIS is my fav)
  • 1 1/2+1/8 tsp. baking powder (use corn- & aluminum-free and MYO)
  • 2 squares unsweetened chocolate (I use my homemade chocolate)
  • 1⁄4 cup butter (from grass-fed & happy cows, please)
  • 1 cup maple syrup (I love THIS maple syrup)
  • 1 egg (happy roaming hens, please)
  • 2 tsp. vanilla (MYO or use one like THIS)
  • Icing sugar-optional

Sooooo easy, friends.

That sugar mentioned above for the cookies? Yup. Just take a few spoonfuls and toss it in your blender. I use my Vitamix. I have THIS ONE in red, a surprise gift from hubs that gets quite a workout in my kitchen.

  • Toss in sugar
  • Turn blender on high
