The BEST Chocolate Avocado Mousse (seriously!)

Okay, so maybe that title is a bit dramatic, but I’ve been perfecting this for a while now and I truly believe that it is just the bee’s knees. I love it, I think that my toddler loves it even more than me, and my (sometimes hard to please) hubby also thinks it is great. WIN for MOMMY!

How did I come to develop this recipe? Well, if you’ve been on Pinterest lately you’ve no doubt seen multiple pins for chocolate avocado mousse. When I first saw them months ago (and yes…pinned them myself), I was stoked. I got right to work on the mousse. How was it? Eh, okay. No one was overly excited about it in my home…it was just okay.

But I was had been so excited to create it! Maybe I should try another recipe.

Alright then, so I tried another one, with the same amount of excitement. THIS one would be IT! I mean, it just sounded like such a great idea; such a wonderful marriage of *real* food ingredients. End result…the same. Eh, okay. I mean, neither try was bad, they just didn’t live up to what I had anticipated in my mind. …third time’s a charm, right??

This time, I made some tweaks…quite a few tweaks, really. I could tell by the way it was whipping up that I finally (finally) had a winner on my hands. I let it cool a bit in the fridge, gave my toddler the first bite and heard, “Ummmmm! Moooore!” Before giving him another bite, I indulged. I agreed with Oliver, “Ummmmm! Moooore!” So, here you go…The BEST Chocolate Avocado Mousse (seriously!) 🙂


The BEST Chocolate Avocado Mousse (seriously!)
Ingredients:

How To Make It:

  • Shell your pistachios and place them into your food processor and give them a whirl to break them down into much smaller pieces.
  • Add all of the other ingredients.
  • Process on low for a couple of minutes, turn off, scrape the sides, then process on high for a couple more minutes.
  • When it all comes together, nice and whipped up to the consistency you like, scrape it into some small ramekins (I end up with 4 small ramekins).
  • Place them in the fridge to set for about 30 minutes (longer will make them more solidified, which is also just fine).
  • Eat. Smile. Eat more. Feel good about the incredibly healthy chocolate mousse you just ate.

Yum, Yum, Yum!!! Let me know what you think about this recipe. My real test will be to take this over to the neighbors house the next time we grill out together. I’ll see if anyone would ever guess that this is an uber healthy version of a chocolate mousse. (Kathie- If you are reading this, don’t tell Mary Ellen.) 😉

    1. Morning meditation done, jnrioalung done but missed out on yoga, I rearranged my schedule to fit some other things and it just threw my whole day off, towards the evening I just kept thinking about yoga and wanted to at least do a ten minutes of it before bed but I was just too tired. So far this is the only day I’ve mised during the challenge so moving on from this day and looking forward to my next class : )
