Equipment

Ingredients
  

  • 1/4 Cup Butter
  • 1 Small Onion – Or more, if you like!
  • 1/3 Cup Orzo
  • 1 Cup White Rice – I use Basmati or Jasmine
  • 2 Cups Chicken Stock (or broth) – Grass-fed is best
  • 1 Teaspoon Garlic Powder
  • 3/4 Teaspoon Sea Salt
  • 1/8 Teaspoon White Pepper – or 1/4 teaspoon black pepper
  • 1/2 Teaspoon Smoked Paprika
  • 1 Cup Sweet Peas – I use frozen organic peas
  • 1 Teaspoon Dried Parsley – If using fresh use 1 Tbsp.

Instructions
 

  • Melt Butter & Sauté Onion – Turn the Instant Pot to sauté mode. Melt the butter and add the diced onion. Cook for about 3 minutes, stirring to prevent sticking.
  • Brown the Orzo – Add the orzo and continue sautéing for 3–4 minutes, stirring often, until the orzo is golden brown
  • Sauté Rice Add the rice and sauté for 1 minute to coat the grains.
  • Add Stock and Spices – Pour in the chicken stock. Add the garlic powder, sea salt, white pepper, and smoked paprika. Stir to combine.
  • Add Peas – Stir in the frozen peas.
  • Pressure Cook – Secure the Instant Pot lid and turn the valve to the “Sealing” position. Pressure cook on high for 3 minutes.
  • Natural Release – Once done, turn off the “Keep Warm” function to prevent sticking. Let the pressure naturally release. Once the pin drops, carefully remove the lid.
  • Add Parsley – If you are adding parsley, now is the time. Fluff and serve!
