16ozHoney(local honey is great if you have it, if not try to use organic)
Instructions
Fill a glass jar roughly half full with thyme. Cover thyme with honey and fill jar to the top. Stir the herbs a bit to coat the herbs in honey and to remove as many air bubbles as possible. Place lid on jar.
Place your jar in a warm spot, preferably by a sunny window to allow the honey to infuse with the thyme. Let infuse for at least a few days...2 weeks is even better. (If you need a faster method you can put the honey and thyme in a double boiler. Heat at 180 degrees for 10-15 minutes).
After two weeks, check to see if the honey smells and tastes like thyme. If it does then you are done! You can strain the thyme out but it’s messy. I prefer to just leave the thyme in. Store in a cool cupboard. Thyme infused honey will last for several months.
Notes
Take by the spoonful. You can also add thyme infused honey into tea. Super yum!
