In a large saucepan, heat the oil over medium heat.
Once the oil is hot, add a three kernels to the bottom of the pan and cover.
Wait until all three kernels pop. Then, add 1/3 cup of kernels in the pan. Do the best you can to be sure they’re in a single layer. If you like, add salt at this point, too.
Cover the saucepan and remove from the heat for 30-40 seconds.
Then, return pan to the heat. The kernels should begin popping within a few minutes.
Once you hear them begin to pop, move the lid to side the a bit, letting just a tiny bit of air in and out (this will help keep the popcorn from getting soggy).
After a few minutes the popping will slow down. That’s your cue to take it off the heat, take the lid off the pan and transfer the popcorn to large bowl.
