Naturally Free Italian Seasoned Grilled Eggplant

Ingredients

large organic eggplants
washed and sliced about a 1/2 inch thick

extra virgin olive oil
organic

balsamic vinegar

Naturally Free Italian Seasoning
Instructions
Put the olive oil, balsamic and Italian Seasoning in a small bowl and whisk until just combined.
Put eggplant slices in a large bowl.
Pour the mixture over the sliced eggplant and let marinate for about 20 minutes.
Place the marinated eggplant on a warm grill rack.
Let them brown about 3-4 minutes.
A grill plate on the stove top or even a panini press will do the trick too!
