Black Pepper Pork Stir Fry
Bold, glossy Black Pepper Pork Stir Fry made in one pan with budget-friendly pork stew meat. Peppery, savory, and better than takeout.

Ingredients

pork stew meat
- trimmed into 1-inch cubes

tbsp
soy sauce

tbsp
oyster sauce
- or hoisin if that’s what you have

tbsp
rice vinegar
- or white wine vinegar

cornstarch

avocado oil
- or your fav cooking oil

onion
- sliced

carrots
- thinly sliced on a bias (so they cook quickly)

garlic
- minced (I use a grater!)

fresh ginger
- grated (optional but nice)

coarsely cracked black pepper
- or more or less, adjust to taste

brown sugar
- or honey

chicken broth
- or water

green onions
- sliced (for garnish)
Instructions
Marinate the Pork
Toss pork with 1 tbsp soy sauce + cornstarch. Let sit for 15–20 minutes.
Mix the Sauce
Stir together the rest of the soy sauce, oyster sauce, vinegar, sugar, broth, and black pepper.
Cook the Pork
Heat 1 tbsp oil in a large skillet/wok over medium-high heat.
Sear pork until browned and nearly cooked (4–6 minutes). Remove and set aside.
Cook Veggies
Add the remaining oil. Toss in onion, carrot slices, garlic, and ginger. Stir-fry until onion softens and carrots are just tender (about 3–4 minutes).
Finish
Return pork to the pan, pour in sauce, and toss everything together.
Simmer 2–3 minutes until pork is glazed and sauce thickens slightly.
Serve
Over steamed rice, noodles, or plain. If you like, sprinkle with green onions.
Notes
Little boost: If you want extra richness, stir in a small knob of butter at the very end. It mellows the pepper beautifully.
🥕 Don't like carrots? Leave them out! Add bell peppers, green beans, broccoli, or whatever you like!
