When the weather is hot, my family loves to barbecue just about everything! Who wants to a) spend time inside cooking, or b) stand over a hot stove when you could instead be lounging outside with a nice, refreshing glass of iced tea? Not me!
The barbecue is not reserved for slabs of meat in our house, though! We like to cook just about everything on the barbecue, tweaking and modifying recipes to make them work perfectly for the grill.
We love grilling everything from pineapple to potatoes to eggplant. In fact, one of our favourite make-ahead meals for the week – this delicious eggplant and hummus wrap – is prepped during our Sunday barbecue sessions!
Coming from an Indian background, one of my favourite comfort meals is spicy and flavourful Indian stuffed baby eggplant with simple and delicious Indian spiced okra. This meal doesn’t have to be time-consuming or labour-intensive if you just move the meal from stove-top to grill-top!
