Thyme Infused Honey (and how to use it!)

  1. Fill a glass jar roughly half full with thyme. Cover thyme with honey and fill jar to the top. Stir the herbs a bit to coat the herbs in honey and to remove as many air bubbles as possible. Place lid on jar.
  2. Place your jar in a warm spot, preferably by a sunny window to allow the honey to infuse with the thyme. Let infuse for 2 weeks. (If you need a faster method you can put the honey and thyme in a double boiler. Heat at 180 degrees for 10-15 minutes).
  3. After the two weeks, check to see if the honey smells and tastes like thyme. If it does then you are done! You can strain the thyme out but it’s messy. I prefer to just leave the thyme in. Store in a cool cupboard. Thyme infused honey will last for several months.
Notes
Take by the spoonful. You can also add thyme infused honey into tea. Super yum!
