Quinoa Burgers {Vegan}
Serves: 10
  1. Cook quinoa according to package directions. I like to use half water and half chicken stock.
  2. In a small bowl, combine water with chia seed until paste has formed and set aside to gel.
  3. Mash steamed carrots with a fork.
  4. In a large bowl, combine all ingredients except chia seed and avocado oil.
  5. Mix in the gelled chia seed and 1 T of avocado oil until fully incorporated.
  6. Oil or water your hands and form mixture into patties. Make sure you pack them together firmly.
  7. In a large cast iron skillet, place 1 T avocado oil over medium heat.
  8. Working in batches, saute burgers for 5 minutes, or until browned.
  9. Flip carefully and cook for another 5 minutes.
  10. Serve warm on your choice of buns or salad.
