Cleansing Quinoa Salad
- 1 ½ cups kale, shredded
- 1 red bell pepper, diced
- ½ cup roasted, unsalted sunflower seeds
- ¼ cup flax seed
- ½ cup tricolor quinoa, dry
- ¼ cup olive oil
- 2 Tablespoons avocado oil
- the juice of 2 lemons
- salt, to taste
- Cook quinoa according to package directions and allow to cool.
- While quinoa is cooling, combine kale, bell pepper, sunflower seeds, and flax seed in a large bowl.
- In a separate bowl, make the dressing by mixing together olive oil, avocado oil, and the lemon juice.
- Add cooled quinoa to the vegetable mix and combine completely.
- Add dressing to salad and toss to cover evenly. Add salt to taste.
