Cleansing Quinoa Salad
  • 1 ½ cups kale, shredded
  • 1 red bell pepper, diced
  • ½ cup roasted, unsalted sunflower seeds
  • ¼ cup flax seed
  • ½ cup tricolor quinoa, dry
  • ¼ cup olive oil
  • 2 Tablespoons avocado oil
  • the juice of 2 lemons
  • salt, to taste
  1. Cook quinoa according to package directions and allow to cool.
  2. While quinoa is cooling, combine kale, bell pepper, sunflower seeds, and flax seed in a large bowl.
  3. In a separate bowl, make the dressing by mixing together olive oil, avocado oil, and the lemon juice.
  4. Add cooled quinoa to the vegetable mix and combine completely.
  5. Add dressing to salad and toss to cover evenly. Add salt to taste.
