Raw Lemon Bites
Serves: 16 balls depending on how large or small you make them
 
Ingredients
  • 1 cup almonds (organic, like these)
  • 1 cup cashews (organic, like these)
  • 10-12 medjool dates
  • Zest of 1 lemon
  • A squeeze or two of lemon juice
Instructions
  1. In a food processor, combine all of the ingredients and process until nuts are ground with small bits. You don’t want to let it go too long or you will end up with nut butter! You will know you have the right consistency if the mixture sticks together when you pinch it between two fingers.
  2. Start with 10 medjool dates, if it is not sticking together, add 2 more dates.
  3. When you get it just right, roll the mixture into snack-sized balls.
