When it comes to cooking and baking, I’m up for pretty much anything. I love experimenting with ingredients to create delicious–and healthy– food from scratch. But, I’ll admit, even I was skeptical of black bean brownies.

So, I know what you’re thinking…how can brownies whose main ingredient is black beans actually taste good? Let me tell you how!

The black beans are simply the base of the batter. Their mild flavor is overpowered by the sweetness of the sugar, the milk, and rich flavors of the cocoa and coffee. (The coffee actually brings out the chocolatey goodness in a recipe, so don’t skip that part!) And lastly, the batter gets a nice lift from the vinegar and baking soda combination. Add in a few chocolate chips or carob chips and you have a yummy and satisfying treat that is certainly healthier than a traditional brownie.
